White Pumpkin Kootu is the unique dish made with kadhu (pumpkin) and flavorful spices. A best dish, blended in fresh coconut is the specialty from the Southern part of India and is quite amazing when served with hot Indian roti.

Ingredients:
- 4 cups white pumpkin (kadhu)
- 1 cup fresh coconut (nariyal) scraped
- 1 tsp white sesame seeds
- 1 tbsp cumin seeds
- A pinch of asofoetida (hing)
- 4 green chillies finely chopped
- 2-3 whole Kashmiri Red chillies
- 4-5 black peppercorns
- 1/2 tsp turmeric powder
- 1-1/2 tsp black gram split (urad dal)
- 2 tsp rice (chawal)
How to make White Pumpkin Kootu:
- Chop the pumpkin into small pieces and keep aside.
- Heat 4 cups of water, add salt, turmeric powder, asafoetida and chopped pumpkin.
- Stir altogether for 3-4 minutes.
- Meanwhile, combine all other ingredients and blend to make a smooth paste.
- When the pumpkin mixture thickened, add the prepared spices paste.
- Simmer for 3-4 more minutes until it thickens by stirring frequently.
- Serve hot with roti or jeera rice.
