Sukhi arbi / Dry arbi or Indian Colocasia Recipe is one of the best option for eating during fasting days. It’s a dry Indian Vegetable Recipe, cooked in mild spices. We are very fond of sukhi arbi and I generally accompany my sukhi arbi with dal and rice, but sometimes it is relished with chapati as well. Stir-Fry Arbi (Taro Root) is mildly spiced up with a light and crunchy taste of spices and makes a great side dish or also can be served as an appetizer.
Arbi masala is just a simply mixture of flavorful Indian herbs and few spices. Today I’m boiling my arbi, but sometimes I warm it in microwave just to make it tender. Before cooking arbi in spices and masalas, it is very important to make it either warmed, or boiled. Let’s see how to make this simple but very tasty arbi recipe step by step.
How to make Sukhi Arbi Recipe:
Sukhi Arbi Recipe is also known as Indian Colocasia or Dry Taro Root. Stir-Fry Arbi is mildly spiced up with a light and crunchy taste of Indian spices.
Ingredients
- 300 gm arbi (Colocasia / Taro Root Vegetable)
- 3/4 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1-1/2 teaspoon coriander powder
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon garam masala powder
- 2 cups oil for frying
- Salt to taste
Instructions
- Select medium size arbi and keep it boiled and ready with spices. You can boil arbi in two different ways. Wash the arbi very well and pressure cook it for 4 whisltes. Or take some water in a microwave safe bowl just covering the arbi. Microwave on high for 5-6 minutes. Peel of the skin and keep aside.
- Meanwhile heat good amount of oil in a deep frying pan. Drop few arbis at a time in hot oil and deep fry on a medium high flame, till little browned. Drain the arbi and allow it to cool down.
- When the arbi little cools down, lightly press the fried pieces between the palms of your hands. Now heat 1 tsp of oil in a pan, put the fried arbi and keep the flame to the lowest. Add salt to taste, cover and leave to cook only for 2 minutes, so that urbi turns soft.
- Uncover and add remaining spices and toss the arbi uniformly with the spice mixture.
Notes
You can serve Sukhi Arbi Recipe either with hot Indian Chapati or as a side dish to serve with Jeera Rice and Dal Tadka.
