Kobhi Zunka is a different preparation of making Indian cabbage. Here cabbage is shredded and carefully cooked with gram flour and spices. Cook it on medium flame to get the beautiful aroma and serve hot with Indian roti.
Ingredients:
- 2 cups fresh cabbage (patta gobi) shredded
- 4 tbsp Bengal gram flour (besan)
- 3-4 curry leaves (cut into half)
- 1/2 tsp black mustard seeds
- 1/2 tsp yellow mustard seeds
- 1/2 tsp shah jeera (cumin seeds)
- A pinch of asafoetida (hing)
- 1/2 tsp cayenne powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- Salt to taste
- 2 tbsp cooking oil
How to Make Kobhi Zunka:
- Heat a heavy bottom pan and add gram flour.
- Roast by stirring constantly till the flour changes its color.
- Make sure it should not get burnt.
- You must stir to avoid the lumps formation, on a moderate heat.
- As soon as the smell and color changes, remove it from the heat.
- Heat the oil in another non-stick pan.
- And mustard seeds, cumin seeds and curry leaves.
- Allow the seeds to pop up.
- Saute for a minute.
- Now Add cabbage, turmeric, asafoetida, coriander, cayenne powders and salt, mix well.
- Lower the heat and add little water.
- Cook until cabbage is done and crisp.
- After few minutes of cooking, higher the flame and dry the liquid of the sabzi.
- At this moment, add roasted gram flour and stir very well.
- Roasted flour will help in absorbing the liquid and oil to form clumps.
- Break off the clumps to cook them.
- Cook for 3-4 more minutes and remove from the heat.
- Serve hot with roti, puri or naan.
