Gobi Simla Mirch is the spicy combination of cauliflower, capsicum and rich Indian spices. You can make this dish to serve as a main course veggie or as a side dish, in both ways it is all time hit recipe.

Ingredients:
- 250 gm cauliflower (gobi / gobhi)
- 2 big capsicum
- 1 potato (peeled and cubed in small pieces)
- 1 onion finely chopped
- 2 tomatoes chopped
- 2 tsp ginger-garlic paste
- 4 green chillies finely chopped
- 1 tsp mustard seeds
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/2 tsp dry mango powder
- Salt to taste
- Cooking oil
How to make Gobi Simla Mirch :
- Separate the cauliflower florets, also chop the capsicum in some slices.
- Heat good amount of in a frying pan to shallow fry the veggies.
- I haven’t used potatoes, but if you want you can add that as well.
- Shallow fry the capsicum and cauliflower florets.
- Drain on oil absorbent paper and set aside.
- Remove the oil from the frying pan by leaving only 1/2 tsp of oil.
- Add mustard seeds and green chillies.
- Saute and add ginger-garlic paste.
- Saute for few more seconds by adding chopped onion.
- Stir fry until onion translucent and then add chopped tomatoes.
- Mix some salt and spices.
- Stir fry over moderate heat till the mixture little bit thickens.
- Now add fried vegetables and mix well.
- Reduce the flame and cover the pan.
- Leave to cook for about 4 minutes until vegetables are done.
- Taste and season with salt and spices, if required.
- Serve hot with Indian roti/ naan/ puri or paratha.
