Dum Aloo is the unique twist given to the baby potatoes, here they are cooked in ginger-garlic paste and whole spices, then flavored with yogurt and garnished with raisins. It is one of the best main course dish, which can be seen almost in every party or occasion.

Ingredients for making Dum Aloo:
- 1/2 kg baby potatoes
- 2 onion thinly chopped
- 2 tomatoes chopped
- 4-5 green chillies paste
- 2 tsp ginger-garlic paste
- 2 tbsp yogurt
- 1 bay leaf
- 2 green cardamoms crushed
- 2-3 black peppercorns
- 2-3 cloves
- 2-3 cinnamon bits
- 1/2 tsp red chilli powder
- A pinch of turmeric powder
- 1/2 tsp coriander powder
- 3/4 tsp garam masala powder
- 1 tbsp ghee / oil
- 1/2 tsp lemon juice
- Fresh cilantro chopped
- Salt to taste
- Few raisins
How to make Dum Aloo:
- Boil the baby potatoes and set aside.
- Heat ghee or oil in the vessel.
- Add whole garam masala, saute for a few seconds.
- Add chopped onion and fry until onion becomes little brown in color.
- Stir in green chillies, ginger-garlic paste and chopped tomatoes.
- Mix well and cook until the mixture turns into nice red in color and oil touches the sides of the pan.
- Add 1 cup of water, curd and baby potatoes.
- Now mix all the spices, stir and cover the vessel.
- Leave to cook for few minutes on low flame.
- Garnish with some lemon juice and chopped cilantro.
- Mix well, Garnish with raisins and serve hot with roti or rice.
Chef Tips:
- Sometimes these baby potatoes are not available in the market, then I use normal potatoes, just need to chop them in big chunks.
- Dum Aloo can be made with fried baby potatoes as well.
- Temper the dish with little bit of melted butter, you kids will definitely like it.
- You can garnish this dish with fresh cream and nuts of your choice.
