Baingan Bharta is an exotic preparation of baby eggplants. Here brinjals are roasted, mashed and then cooked in simple but unique spices. It is one of the most delicious dish of North Indian cuisine.

Ingredients:
- 8 brinjals (eggplants)
- 1 onion thinly chopped
- 2 tomatoes chopped
- 4 green chillies chopped
- 1/2 inch ginger minced
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 2 tbsp oil
- Fresh coriander leaves chopped
- Salt to taste
How to make Baingan Bharta:
- Roast the whole baingans on the gas.
- Hold them from the stems and roast from all the sides until browned.
- You will observe the brinjals start shrinking and skin is getting off then turn the gas off.
- Allow to cool, remove the skin and mash them completely.
- Now heat the oil in a pan, add green chillies and ginger.
- Saute for half a minute.
- Add onions and saute until onions translucent.
- Add tomatoes, salt and red chilli powder.
- Mix well and stir for 2-3 minutes.
- Add the mashed brinjals and mix evenly with the masala of onion and tomatoes.
- Cook for 6-7 minutes on medium heat.
- Add turmeric powder and cumin powder.
- When the oil starts separating then mix fresh coriander leaves.
- Serve hot with roti or bread slice.
Chef Tips:
- You can roast the brinjals in the oven as well.
- You can cool the brinjals by refreshing with the cold water.
