Khandvi is a smooth and delightful mixture of besan and butter milk. It is the special Gujarati snack dish that is garnished with grated coconut to make it more special and simply irresistible.

Ingredients:
- 2 cups besan (bengal gram flour)
- 4 cups butter milk (chaas)
- 1 tbsp turmeric powder
- Salt to taste
- A pinch of asafoetida
- 2 tbsp oil
- 4 cups water
For Garnishing you need:
- 1 tsp oil
- Few curry leaves
- Fresh cilantro chopped
- 2-3 green chillies thinly chopped
- 1/2 tbsp mustard seeds
- 1/2 tsp sesame seeds
- 1 tbsp coconut grated
How to make Khandvi:
- Combine besan, salt, asafoetida, butter milk and turmeric powder.
- Mix very well with the hand blender and gradually add water to break the lumps.
- Keep the batter aside for 20-25 minutes.
- Heat oil in a big non-stick pan.
- Add the batter and cook on medium high heat for about 8-10 minutes.
- Stir continuously until the raw flavor of the batter goes out.
- Grease any round shaped plate with little bit of oil or butter.
- Now pour a spoonful of prepared mixture on the greased plate.
- Spread as thin as you can with the help of flat spoon.
- Make a circle just like a dosa.
- Allow to cool for few minutes, cut into side strips and fold from inside to make rolls.
- Repeat the same procedure with the remaining batter and finish up with proper folded khandvi.
- Place the delicious khandvi on serving dish.
- Heat oil in a saucepan and add curry leaves, cumin seeds, sesame seeds and thinly chopped green chillies.
- Saute for few seconds and pour over the khandvi rolls.
- Garnish with chopped cilantro and grated coconut.
- Serve with spicy coriander chutney.
Chef Tips:
- You may adjust the spices as per your requirement.
- The batter for making khandvi should be neither too thick nor too thin.
- This Gujarati style khandvi is more delicious only when served hot and immediately.
