Aloo Bhatura Recipe is the Deep Fried Indian Bread and famous Punjabi Breakfast made with Maida, Yogurt and Boiled Potatoes, usually served with Chole or Aloo based bhaji. It is also known as Aloo Bhatoora or Aloo Batoora.  Aloo Bhatura is very famous among kids, because it tastes very soft and yummy.

My husband and my mother in law like eating Chole Bhature allot, and I learned making different kind of bhatura’s for them.  It took me some time to expertise in art of making Bhature, but it was very simple once I learned how to make it.  While we have to keep other Bhature dough aside for few hours for making Bhatura Recipe, but here we don’t need to keep this dough aside for more than few minutes while making Aloo Bhature Recipe, because Aloo (Potato) makes dough softer and hence it will break the dough, if you will keep dough aside for long time.

It is also important that you seal Bhatura dough from sides before rolling out and putting them in oil and while frying it, keep pouring the oil on top of it to make it fluffy like you get in restaurants.  See how fluffy my aloo bhatura is. Aloo Bhatura Recipe

Ingredients

  • 2 cups maida (all purpose flour / refined flour)
  • 2-3 boiled potatoes
  • 1/3 cup fresh yogurt (dahi / curd)
  • 1 tablespoon oil
  • Salt to taste
  • Oil for deep frying
  • Lukewarm water for making dough

Instructions

  1. Boil 2-3 potatoes, peel and mash or grate them in a big bowl.
  2. Take maida in a bowl and add mashed potatoes,1/3 cup yogurt, 1 tablespoon oil and salt to taste.
  3. Mix all ingredients nicely and gradually add lukewarm water at a time and knead soft dough.
  4. Make the dough little bit hard than chapatti dough and soft than puri dough.
  5. Cover the dough and keep it aside for 15-20 minutes so that it gets fermented nicely and becomes puffy. Dough for making bhatura is ready.
  6. Heat good amount of oil in a frying pan and put some dry flour in your hands and take little amount (lemon size) of dough in your hands, make a small round ball and roll out with the help of rolling pin. Give it a nice round shape, just like you do with puris.
  7. When the oil is heated properly, gently place the rolled out bhatura in pan and fry it on medium high flame.
  8. When it floats at the surface, press it slightly with ladle to make it puffy, turn it upside down when it gets brown from one side. Fry until both sides are cooked properly and evenly. Take out the fried bhatura in a plate covered with kitchen paper. Like wise fry all bhatura’s.

Notes

You can serve this yummy Aloo Bhatura with Punjabi Chole, Pickle and Lassi. You can even have it this bhatura as it is with tea, it tastes great. The unique point about aloo bhatura is that they remain soft even after they get cool.
