Mango Rice is the rich and exotic rice dish, that contains unique taste of fresh mangoes and cooked with coconut and spices.

Ingredients:
- 4 cups mangoes (peeled and chopped)
- 2 cups basmati rice
- Few curry leaves
- 2 tbsp roasted peanuts
- 2 tbsp mustard seeds
- 1 tbsp cumin seeds
- 1/2 tsp turmeric powder
- 2-3 green chillies finely chopped
- 3 tbsp grated coconut
- A pinch of asafoetida
- Fresh coriander leaves finely chopped
- Salt to taste
For the Tempering you will require:
- 3 tbsp Chana Dal
- 1-1/2 tsp mustard seeds
- Few curry leaves
- 2 whole red chillies (halved)
- 2 tsp cooking oil
How to make Mango Rice:
- Rinse the rice thoroughly and cook with some salt.
- Keep the cooked rice aside to cool.
- Combine the coconut, mustard seeds, cumin seeds, green chillies, and asafoetida in a grinding jar.
- Grind to make a fine paste.
- Add some pieces of mango in a paste and grind again for few seconds.
- Keep the prepared masala aside for further use.
- Heat the oil in a pan for making the tempering.
- Add mustard seeds along with chana dal.
- Saute and the add curry leaves and red chillies.
- After few stirring, add peanuts.
- Fry the mixture very well on medium flame till the chana dal turns golden.
- Now add the remaining mango pieces and cook until the mango is fully cooked.
- Mix the prepared masala and cook continue until the raw smell disappears.
- Now slowly add the cooked rice along with remaining ingredients and adjust with seasoning.
- Garnish the mango rice with some curry leaves and chopped coriander.
- Serve them piping hot.
