Sweet Mango Pickle is a sweet and tangy pickle made with raw mangoes, sugar and salt. This pickle is a great accompaniment with any lunch or dinner. Steps are so easy that you can make it easily at your home.

Servings: 1 medium size jar
Ingredients:
- 500 gms green mangoes (raw aam)
- 325 gms sugar
- 1-1/2 tsp cumin seeds
- 1 tsp poppy seeds (khus-khus)
- 1/2 tsp black pepper powder
- 2 tsp cardamom powder
- 1 tbsp red chilli powder
- 2 tbsp olive oil
- Salt to taste
How to make mango pickle (aam ka mitha achar):
- Roast the cumin seeds in a saucepan and keep aside.
- Wash the mangoes thoroughly in water, peel and then grate them finely.
- Shift them into a big bowl and stir with salt, sugar and black pepper powder.
- Add oil, roasted cumin seeds and poppy seeds.
- Toss and add red chilli powder and cardamom powder.
- Mix very well so that mangoes coats in all the spices.
- Fill the pickle in sterilized jars, cover with a thin muslin cloth and then put a tight lid over the cloth.
- Leave the pickle under the sun exposure or in the heat for about 4-5 days.
- Shake the jar 3-4 times in a day until gets ready.
Chef Tips:
- It is an important tip that always clean the jars with hot water and vinegar and then only fill the pickle. In this way pickle remains fresh for many months.
- This is one of the most tastiest pickle served with dal and rice.
- Use the air tight jars and use clean spoon to take out the pickle from the jar for long lasting of pickle.
