Sweet and Sour Lemon Pickle is the combination of lemon, sugar, olive oil, salt and cinnamon. This is the best option for the people who likes sweet but sour flavored pickle.

Ingredients:
- 15-20 lemons
- 2 tbsp salt
- 1 cup castor sugar
- 1 tsp red chilli powder
- 1 tbsp olive oil
- 1 cup water
- 1 bay leaf
- 2-4 cloves
- Few bit cinnamon
How to make Sweet and Sour Lemon Pickle:
- Put the lemons in sufficient amount of warm water for 20-25 minutes.
- Pat dry with kitchen napkin and then remove out the skin (outer layer) of the lemons.
- Remove out the seeds and cut into small cubes.
- Heat the oil in a big vessel.
- Add bay leaf, cinnamon and cloves.
- Saute for few seconds and then stir with water, sugar, salt and red chilli powder.
- Mix well and add the pieces of lemon.
- Cook until starts boiling and mixture becomes thick.
- Switch off the gas and allow the pickle to cool.
- Shift into air tight container and leave at least for 5 days until sets.
Chef Tips:
- Always use fresh lemons to make the best home made pickle.
- You can add spices as per your requirement.
- Vegetable or sunflower oil can be used instead of olive oil.
- If the castor sugar is not available, then grind the normal sugar into a powder and then use for making this pickle.
- This pickle remains fresh for 2-3 months, if stored properly.
