Stuffed Sour Mango Pickle is a delicious (chatpata) pickle made by stuffing the paste of seeds into the sliced mangoes. This pickle is one of the most tastiest pickles because of several flavors and aroma of seeds and spices.

Ingredients:
- 4 mangoes
- 1-1/2 tbsp dried fenugreek seeds
- 2 tsp turmeric powder
- 1 tsp thymol seeds
- 1-2/3 tsp aniseed
- A pinch of ajwain
- 4 tbsp mustard seeds
- 1-1/2 tsp kalonji
- 2-3/4 tsp red chilli powder
- 1 tsp garam masala powder
- 1 cup mustard oil
- Salt as per taste
How to make Stuffed Sour Mango Pickle :
- Combine the seeds, roast in a sauce pan, allow to cool and then grind to make a coarse powder.
- Take 2 tbsp of oil in a big bowl, add the seeds powder and spices.
- Make a smooth and thick paste and adjust with the salt.
- Cut the mangoes in thick slices from the center, do not cut from the bottom.
- Remove out the middle part, stuff the smooth paste into the mangoes.
- Stuff all the mangoes in the same way and place in the sterilized jar.
- Spread the mustard oil over the mangoes and cover it tightly.
- Keep the jar under the sun light for about 12 days and shake once daily.
- Your pickle will get ready soon, enjoy at the time of lunch and dinner.
Chef Tips:
- It is very important to sterilize the jar very well before filling with the mangoes, else the whole efforts of making pickle will go in vain.
- Adjust the spices as per your taste.
- Do not store the container or pickle jar in refrigerator, always leave to set it in the room temperature.
