Hot Lemon Pickle is simply a hot and spicy flavored pickle made with fresh lemons, ginger, mustard oil, fenugreek and mustard seeds. Mustard oil brings the nice aroma in the pickle and keeps fresh for long time.

Ingredients:
- 500 gms fresh lemons
- 4-5 cloves garlic minced
- 1-1/2 inch ginger chopped
- 2-3 green chillies thinly chopped
- 2 tbsp turmeric powder
- 1 tsp red chilli powder
- 2 tbsp vinegar
- 2-2/2 tsp mustard seeds
- 2 tsp dried fenugreek seeds
- 1/2 tbsp asafoetida
- 1 cup mustard oil
- Salt to taste
How to make Hot Lemon Pickle:
- Wash the lemon in normal water and pat dry with kitchen cloth.
- Cut each lemon into 6-8 pieces and remove out the seeds.
- Heat the oil in a pan and add ginger, garlic and green chillies.
- Saute for few seconds and now add pieces of lemon, mustard seeds, fenugreek seeds, asafoetida and mustard oil.
- Mix well and cook on low flame for 2-3 minutes.
- Add salt, red chilli powder, turmeric powder and vinegar.
- Mash the lemons little bit with the help of spatula.
- Toss and stir just for few seconds.
- Switch off the gas and allow the mixture to cool completely.
- Fill in the sterilized jars and store for 8-10 days until sets.
Chef Tips:
- It would be much better if you are keeping this pickle under the sun at least for 10-12 days, it will get ready completely with the soft taste.
- This pickle can be stored for 2-3 months, for that you just need to keep it in air tight jar, store at cool and dry place, cover the lid of pickle jar with muslin cloth for long lasting.
