Carrot Pickle (gaajar ka achar) is a delicious pickle made with carrots, nigella seeds, mustard seeds and other healthy ingredients. Carrots contain lots of iron and fibre, hence there is no harm in eating this pickle on daily basis.

Ingredients:
- 1 kg carrots
- 2 tbsp salt
- 1 tbsp yellow mustard seeds
- 1 tsp nigella seeds
- 1 tbsp red chilli powder
- 1/2 tsp jaggery (gur)
- 2 cloves crushed
- 2 cardamoms crushed
- 2 tbsp mustard oil
How to make Carrot Pickle:
- Peel the carrots and cut them into long pieces.
- Boil the sufficient amount of water, add the carrots and salt.
- Boil the carrots for few minutes until tenders.
- Grind the jaggery and make a smooth powder.
- Combine the seeds, red chilli powder, jaggery powder, cloves, cardamoms and oil.
- Mix well and add the boiled carrots.
- Heat a non-stick pan and pour this carrot mixture.
- Simmer the flame and cook over moderate heat just for 2-3 minutes.
- Test and check the seasoning, you may require to add little bit of salt.
- Leave the pickle to cool completely.
- Fill the sterilized jar with the pickle and cover first with a muslin cloth and then with a tight lid.
- Keep the jar under the sunlight at least for 10 days and shake 2 times in a day.
- Serve with your favorite meal.
Chef Tips:
- Mustard oil is more preferable to make this pickle, but if it is not available then any normal cooking oil can be used.
- Make sure at the time of buying carrots, always go for the orange-red colored carrots.
- You may try making this pickle without boiling the carrots. Still it will be tasty and healthy.
