Thandaai is cool and refreshing Indian drink made in the unique style by gathering several flavorful herbs and spices. Indians most often make it on their special occasions and festivals.
Preparation time: 15 minutes
Cooking time: 30-35 minutes
Servings: 1 ltr bottle
Ingredients:
- 3-1/2 cups water
- 1 ltr milk
- 2 tbsp melon seeds
- 2-3 cloves
- 4 cardamoms
- 3-4 black peppercorns
- 2 tbsp fennel seeds
- A pinch of carom seeds
- 1 cup cashew nuts blanched
- 1/2 cup almonds chopped
- 1/2 cup pistachio chopped
- 2 tbsp raisins
- 1/4 tsp saffron strands
How to make Thandaai:
- Heat the water in a big vessel and bring to few boils.
- Add cloves, cardamoms, fennel seeds, carom seeds and peppercorns.
- Stir for few seconds and add blanched and chopped dry fruits along with raisins and melon seeds.
- Mix very well and switch off the gas.
- Keep aside at least for 30 minutes.
- Now blend the mixture until turns into smooth texture.
- Pour the blended mixture into the strainer and squeeze out as much as you can to get the maximum liquid form.
- Now combine the milk and saffron very well.
- Mix in the thandaai and refrigerate for few hours.
- Serve chilled.
Chef Tips:
- For immediate serving, you may add few crushed cubes of ice and chill yourself.
- You can make little spicy thandaai, just by flavoring with few chopped green chillies.
- You can easily refrigerate thandaai for 5-6 days.
