Microwave Zayekedar Arbi is a quick and easy delight of arbi, simply cooked with few spices but with the delicious taste in microwave. It is an easy way to make the flavorful arbi recipe that can be served as a side dish orĀ as a main course dish.

Ingredients:
- 1 kg Arbi
- 8-10 cloves garlic minced
- 1 inch ginger grated
- 2-3 green chillies finely chopped
- 1/2 tbsp chaat masala powder
- A pinch of ajwain (carom seeds)
- 2 tbsp thick yogurt (curd)
- 1-1/2 tbsp bengal gram flour (besan)
- 3/4 tbsp red chilli powder
- 1/2 tsp turmeric powder
- 2 tsp coriander powder
- 1 tsp garam masala powder
- 2 tbsp mint leaves finely chopped
- 1 tbsp coriander leaves chopped
- 2-3 tsp vegetable oil
- Salt to taste
How to make Microwave Zayekedar Arbi:
- Peel the arbi and cut into long halves lengthwise.
- Slit them into 3-4 pieces.
- Apply some salt and keep them aside for about half an hour.
- Later on wash the arbi thoroughly in normal running water, drain and wipe with the dry and clean kitchen napkin.
- Arrange the arbi in any flat plate or dish and spread ginger, garlic, green chillies, chaat masala, ajwain, salt and few chopped mint leaves.
- Sprinkle some cooking oil and mix very well.
- Transfer the arbi in a non-stick pan along with the spice mixture.
- Saute on low heat for about 5-6 minutes.
- Whisk the curd very well and spread over the arbi.
- Turn the gas off and add all the spices.
- Also add remaining cooking oil.
- Put the arbi in microwave proof bowl/dish and microwave on high for about 8 minutes.
- Leave to stand for next 2-3 minutes.
- Serve hot with any flat bread and raita of your choice.
