Ingredients:

  • 250 gm bhindi (okra/ladyfingers)
  • 1/2 tsp cooking oil
  • 3-4 green chillies thinly chopped
  • 1/2 tsp turmeric powder
  • 1-1/2 tsp coriander powder
  • 1 tsp garam masala powder
  • 1/4 tsp dried mango powder (amchur)
  • Salt to taste

How to make Microwave Bhindi (Okra):

  1. Wash the okra thoroughly in normal running water and pat dry with clean kitchen napkin.
  2. Slit each bhindi and cut into small pieces.
  3. In a microwave proof bowl/dish, arrange the bhindi and add salt and oil.
  4. Mix and microwave for about 5 minutes until bhindi turns crispy.
  5. Add the spices and chopped green chillies.
  6. Mix and microwave for 5 more minutes.
  7. Leave to stand for 2 minutes and serve hot either with roti or with any Indian flat bread.
