Sukhi Dal is the Punjabi Special Sukhi (Dry) Chana Dal, cooked with onion and whole garam masala (spices).

Ingredients:
- 2 cups bengal gram flour (chana dal)
- 1 tsp cumin seeds
- 2 bay leaves
- 1 inch cinnamon (cut into bits)
- 3 cloves
- 1 large onion finely chopped
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 2 tsp ghee
- 1/2 tsp lemon juice
- Fresh coriander leaves chopped
- Salt to taste
How to make Sukhi Dal (Dry Chana Dal) :
- Clean the dal thoroughly in normal running water.
- Wash and soak in water for about 30 minutes.
- Pressure cook the dal with 4 cups of water and keep aside.
- Melt the ghee in a pan and add whole garam spices (bay leaves, cloves, cinnamon and cumin seeds).
- Fry until they start to pop up.
- Add chopped onions and fry until onion translucent and turns brown.
- Add cooked dal, salt and spices.
- Leave the dal uncovered on gas to boil for few minutes.
- Garnish dal with chopped coriander leaves and stir in lemon juice.
- Serve hot with Indian chapati / roti, puri, paratha or butter naan.
