Arhar Dal With Green Mango is the unique but extremely tasty combination of arhar dal (pigeon beans) and raw green mango. This Dal dish tastes amazing when served with jeera rice, specially in this summer season. When the season of mangoes is going on, then why not to use them in everyday cooking.

Ingredients:
- 2 cups arhar dalĀ (pigeon beans)
- 1 cup raw mango (cut into cubes)
- A pinch of asafoetida / hing
- Few curry leaves
- 3 green chillies
- 1 inch ginger grated
- 1 tsp mustard seeds
- 2 whole Kashmiri red chillies
- 1/2 tsp red chilli pepper
- 1/2 tsp turmeric powder
- 3/4 tsp garam masala powder
- 1/2 tsp sugar
- 2 tbsp clarified butter / ghee / oil
- Salt to taste
- Fresh coriander leaves (finely chopped)
How to make Arhar Dal with Green Mango:
- Wash arhar dal thoroughly in normal water and soak it in 4 cups of water for about 30 minutes.
- Pressure cook the soaked dal by adding salt and turmeric powder for 4-5 whistles.
- Make sure, the consistency of the dal should be thick.
- Now melt the ghee in a non-stick pan and add mustard seeds.
- When the seeds starts to sputter, add asafoetida, curry leaves, Kashmiri red chillies and grated ginger.
- Saute the mixture for few seconds and then pour the it over cooked dal.
- Cook for another 10 to 12 minutes by stirring occasionally.
- Finally add garam masala powder along with other ingredients and garnish dal with good amount of chopped coriander leaves.
- Serve hot with plain or jeera rice.
