Baked Mushroom Pancakes are made from maida, cornflour, butter and milk. The stuffing is a delicious mixture of mushrooms and spices and finally baked to turn into delicious Indian breakfast recipe.

Ingredients:
- For making pancakes you need:
- 1 cup all purpose flour (maida)
- 2 tbsp cornflour
- 1 cup milk
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 tbsp butter
- 1 cup warm water
For making stuffing you need:
- 200 gms mushrooms thinly chopped
- 1 small onion thinly chopped or grated
- 2 green chillies thinly chopped
- 1/2 cup white sauce
- 1 tbsp butter
- 1/2 tbsp all purpose flour (maida)
- Salt to taste
For proceeding you need:
- 8 cubes of processed cheese
- 2 tbsp butter
- 2 tbsp white sauce
How to make Baked Mushroom Pancakes:
- Lets make the pancakes first, for that combine the flours, milk, salt and baking powder.
- Mix very well and gradually add warm water to make a thick batter.
- Heat a non-stick tawa or frying pan, spread the spoonful of batter at a proper distance.
- Spread butter over all and leave to cook for about 2-3 minutes on medium low heat.
- Cook from both the sides until light golden in color.
- Make all the pancakes like this and use the remaining batter.
- Now for the stuffing heat a non-stick pan and melt a tbsp of butter in it.
- Add green chillies and onion.
- Mix very well and add mushrooms, salt, white sauce and flour.
- Stir until becomes soft and keep aside.
- Preheat the oven to 250F degrees for 5 minutes and grease the baking tray with oil or butter.
- Arrange the pancakes on greasy baking tray at a certain distance.
- Spread 1-1/2 tbsp of stuffing mixture on each pancake and fold inwards.
- Also pour little bit of white sauce all over, smear little amount of butter and grate a cube of cheese on each pan cake.
- Bake at 250F degrees for about 30 minutes until turns into golden in color.
- Serve hot.
Chef Tips:
- You can use par-boiled mushrooms to make this recipe.
- You can keep the pancakes and stuffing mixture ready well in advance and then bake them just before serving.
