Roomali Roti is made with the combination of wheat flour and maida, it is one of the most famous recipe of Indian breads, which is served just like folded handkerchief. To make the perfect roomali roti, it is very important to stretch it as much as you can.

Servings: 8 roomali roti’s
Ingredients:
- 2 cups whole wheat flour
- 2 tbsp all purpose flour (maida)
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp ghee
- Water to knead
- Oil
How To Make Roomali Roti:
- Combine the wheat flour, maida, baking powder, salt and ghee, sieve all together.
- Add bit by bit water and make a soft and elastic dough.
- Cover the dough with muslin or cheese cloth and keep aside for about an hour.
- Divide the dough into small equal balls.
- Roll out each ball into a thin roti just like handkerchief.
- Use dry flour and try to make thin roti as much as you can.
- Take any big U shaped vessel and heat on flame from upside down.
- Spread little bit of oil all over the vessel and place the rolled out roti.
- Cook until little brown spots starts appearing, flip and cook from other side as well.
- Follow the same procedure to make remaining roomali rotis.
- Fold like a handkerchief and serve with any gravy or curry recipe.
Chef Tips:
- You can make this roti on hot griddle as well.
- The another method is, make 2 small rotis, spread flour and combine them, roll out and make extremely thin roti, cook and separate them, fold like a handkerchief and enjoy.
- Oil can be used instead of ghee for making smooth and soft dough.
