Chicken In Green Mango is a unique Indian appetizer. Green mango is a seasonal fruit and this starter is the specialty of summer season in India. I have selected fresh green mango and chicken on bone, just mixed with the normal spices and ginger pulp.

Ingredients:
- 400 gm Chicken (skinned and boned)
- 2 green mangoes (peeled and sliced)
- 3 green chillies finely chopped
- 1 tsp ginger pulp
- 1 big onion finely sliced
- 3-4 tomatoes fine diced
- 3/4 tsp red chilli powder
- 1/2 tsp Turmeric
- 1/2 tsp Onion seeds
- 1 – 1/4 tsp Coriander powder
- Fresh cilantro chopped
- 4-5 Curry leaves
- Salt to taste
- 3 tbsp oil
- 2-1/2 cups water
How to make Chicken In Green Mango:
- Clean the chicken with water and cut into medium size cubes.
- Place the chicken cubes in a big cooking pan and add ginger, garlic, chilli powder, turmeric, salt, onion seeds and coriander powder.
- Mix the spices into the chicken along with half of the mango slices.
- Add curry leaves and stir thoroughly.
- Add water and cook the chicken on low flame for about 10-12 minutes.
- Stir frequently until the chicken is done and water is absorbed.
- Add the remaining mango slices, onions, tomatoes and green chillies.
- Stir and garnish with fresh coriander.
- You can serve this chicken dish either as an appetizer or serve with Indian roti / naan to make a complete meal.
